The original Village Tavern opened its doors in 1984 in Winston Salem NC. The idea was simple, serve the best possible food, at affordable prices, using only the finest freshest ingredients, and to enrich the lives of each other, our guests, and our community. In other words to make a positive difference.

2017 OEIL DE PERDRIX PINOT NOIR BLANC

In France, this wine is traditionally known as oeil-de-perdrix, which translates to ‘eye of the partridge’ and refers to its pink and copper color. My family has been making Pinot Noir in this style for 40 years. Producing this wine requires a gentle hand and a readiness to press the juice quickly once it reaches the desired level of color. We ferment part of the juice in French oak barrels, a technique which adds enough rich texture and light spice to beautifully complement the generous fruit. To preserve its crisp, clean aromas and flavors, we finished it with a twist-top. Perfect on its own as an aperitif, it also complements picnics on the patio and light dishes. Please enjoy this wine well chilled.

2017 VINTAGE
The 2017 growing season was characterized by above average rains and a slightly delayed bud break. We saw strong growth in April and even ripening throughout the year as temperatures soared during the day and the marine layer cooled the region each night. Heat spikes around Labor Day pushed us into harvest and we brought in all fruit by early September.

TASTING NOTES
This wine’s delicate pink and copper hue makes it a poster child for the classic ‘eye of the partridge’ color. An abundance of fruit aromas carries through to a fresh, seductive palate where flavors of pink grapefruit, ripe strawberry, watermelon and lemon rind are rounded out by an opulent and dairy-laden core. Gentle notes of fresh peach and white pepper add character. While the bright qualities of this wine approach flinty minerality, there are also rich fruit notes to balance out the firm acidity. This rosé boasts a long, satisfying finish.

INGREDIENTS

1.5 oz. Cruzan Citrus Rum
0.5 oz. Blueberry Real
0.5 oz. Fresh Lime Juice
5 ea. Mint leaves, torn
Topped with Club Soda

GLASSWARE

12 oz. Clarisse beverage

GARNISH

1 Mint Sprig
3 Blueberries, skewered

INSTRUCTIONS

Don’t muddle. Shake ingredients 1-4 well ice and strain into iced glass. Top with club soda.
